Don Bocarte makes this Atún Rojo Ventresca product from fresh tuna that’s caught using the traditional trap method of “almadraba” — an elaborate and ancient technique that is used to catch this rare fish. It’s sourced  from the Atlantic Ocean, off the coast of Barbate Cadiz, between April, May and June.

Red tuna is one of the rare and expensive tuna in Spain. It’s outsource all of the world for it premium flavor and texture — most commonly used in sushi dishes.
